Last Chance to Win

I’ve had an unusually productive day for a Sunday. Usually I am a huge bum on Sundays in rebellion of the impending work week. However, today I had way more energy than usual and since I’m leaving town Wednesday night I went with it.

After breakfast this morning I did the SGBC exercises for today. They were really fun! I love balancing poses. After that I headed to the gym and did 40 minutes on the elliptical and then went to the grocery store to buy bananas.

I came home and made a Green Monster and continued doing my laundry.

I made up a big batch and gave the rest of it to my roommate. She totally liked it! 

Post lunch I baked another back of zucchini muffins. I’m giving half of them to my Brother and Sister-in-law and kept the other half for me and the roommate. 

After some cleaning and TV watching I was hungry for dinner so I made something easy and delicious.

A salad with raw peppers, asparagus and a dollop of 2% cottage cheese.

A few butternut squash fries from a teeny squash and some sweet potato fries.

All together with a zucchini muffin.

I definitely had two muffins.

Now I’m finishing up my laundry and attempting to start packing. I’m incredibly tired for some reason. I hope that means I’m going to sleep well tonight!

Unexpected Evening

We didn’t end up going to the movie last night, but we had a really good time anyways!

We went to dinner at Paseo Grill. It was my first time eating here and the food was amazing. The atmosphere was great too. The lighting was low but not dark, and there were flat screens throughout the restaurant showing slideshows of art (Paseo is an Arts District in OKC) or beach scenery. It was a really beautiful restaurant. Our waitress didn’t seem to want to wait on two young girls though, but several of the male waitstaff gave us enough good service to make up for it, haha.

We started out with the fried green beens with chipotle aioli.

We chose to order this over the complimentary bread basket, and I’m so glad we did! The chipotle aioli was so good! 

For dinner I had the Vegetarian Platter, which came with orzo & pine nut pilaf, sautéed spinach, tomatoes with balsamic vinegar & bleu cheese, fresh cucumber salad and glazed carrots.

My favorites were definitely the pilaf and the glazed carrots, but it was all delicious! I was completely satisfied after this meal.

We left dinner and were walking to the movie theater when we passed one of our favorite bars and heard some great live music from the upstairs patio. So we decided that sitting outside and listening to live music would be much more summery than sitting in a cold movie theater. 

After about 20 minutes of listening to the band play they introduced themselves. They had been playing covers all night, but they were actually Stephen Speaks, a band I’ve listened to for years now. It was so cool to just stumble upon live music that I really love.

After they finished playing we walked back home and went to bed early. It was a lovely evening. 

Today will be another day of errands, but first I made time for a delicious breakfast.

I would say that 99% of the reason I went grocery shopping yesterday is so I could have these waffles for breakfast today. They are so good! I am still full from this breakfast, it’s the only thing that even comes close to rivaling the Green Monster. 

Now I’m doing laundry, about to go to the gym and then pick up a few things so that I can bake more zucchini muffins today!
