A Mean Bean Salad

I’ve had beans on the brain all day. So as soon as I got home from work today I knew I needed to get my bean on.

I wanted to make a Three Bean Salad, so I threw together a simple dressing.

This consisted of about 1/4 cup Red Wine Vinegar, 1 1/2 tablespoons EVOO, 1 teaspoon minced garlic, the juice from one lemon, and sea salt and course pepper to taste.

To the dressing I added 2 cans Great Northern beans, 1 can black beans, 1 can red kidney beans (all rinsed of course), one cup chopped green onion, and one chopped orange bell pepper.

Then  I stuck it in the fridge and let it marinate while I went to the gym.

At said gym I did 25 minutes on the elliptical while waiting for yoga at 6:45. It’s been a long time since I’ve ellipticized and I worked up a decent sweat. Yoga was amazing! I’ve been in dire need of a good stretch and shavasana.

I’m not going to lie and say I wasn’t fantasizing about my beans all during class though. As soon as I walked through the door I threw together my dinner. I added some quick-cooking couscous to my Three Bean Salad and I had a complete meal in under 10 minutes!

So good! I scarfed this down in record time! Can’t you see why?

After this I was craving something sweet, so I bit the bullet and tried something that everyone else and their mother has already had.

Well, better late than never right? At first, I was like Holy Sh!t this is good but I wasn’t sure it was life changing. Then I thought about it. The absolute fabulousity of this miracle banana concoction means I’m going to have to buy and freeze double the already obscene amount of bananas I’m currently buying. I need to find a composter and donate all my peels!

Seriously though, it was really good and if you’re even more behind the times than I am and haven’t tried it yet, you need to do some immediately!

At present I am watching the Teen Choice Awards and I’m left with a few questions.

1. Did Britney shave her head again?

2. How cute is Ms. J?!?

3. Is it Kosher for underage girls to even dance next to a pole?

4. Am I the only one with a girl crush on Alexis Bledel?

I do not have the answers, but I do have a puzzled look on my face right now. Any input would be appreciated :)

Next on the agenda is my Tone Up Challenge routine, a shower and hopefully a good night’s sleep.

  1. I totally just tried the banana soft serve for the first time this weekend too…same reaction :)

    Next time, add in a little peanut butter to the bananas. Trust me.

  2. I love Alexis Bledel. Rory Gilmore is my favorite TV character of all time, followed closely by Veronica Mars. Yes, I was apparently part of the very few people that watched that show.

  3. You are SO not alone with the girl crush on Alexia Bledel. I LOVE HER! I own the entire series of Gilmore Girls on DVD AND (not sure I should admit this) The Sisterhood of the Traveling Pants. HAH!

    And that definitely does look like a MEAN bean salad! I’m drooling!
