I had to wake up this morning and do my workout, since I have plans this evening. It only furthered my decision that waking up early is not something I enjoy doing and not something I will make myself do unless I have to.
I was scheduled to do 30 minutes of cross training per my 10K training plan so I did 30 minutes on the elliptical. I started out with an easy 3 minute warm-up and then increased the resistance one level every 2 minutes. After I reached 12 I started reducing the resistance every one minute. I was quite sweaty by the end!
My lunch was a bit strange today, but it’s something I’ve been thinking up for quite a while now.
The original plan was to use some of my leftover couscous and top it with cheese, spices and a fried egg. I also knew I wanted to use some hot sauce because I’ve been wanting to try it for awhile.
However, I was really craving a wrap today, so I decided to make the same meal into a brunch burrito.

I scrambled up one egg and one egg white (I use cage free, vegetarian fed eggs btw). While that was going, I heated up a whole-wheat burrito tortilla, some of the leftover couscous and the leftover squash from Monday’s lunch.
I added a wee bit of Louisiana hot sauce before wrapping it, but I didn’t use too much because I can’t handle really spicy food.

Then I wrapped it all up and cut it in half.

And since the plate was looking kind of lonely I threw in some beans, because I really need to get rid of them!

Not your typical burrito, but it was quite tasty! It would have been even better with some sliced avocado, but mine were too ripe. I loved the hot sauce and I’m already dreaming of all the other things I’m going to put it on.
I have lots of errands to run after work and then I’m headed to my Mom’s house for my Brother’s birthday dinner. It may be a late post tonight.

Oh, yum! Delicious-looking burrito! My favorite wrap ingredients are to add something sweet to something savory- like fig jam and goat cheese.

Definitely eggs, peanut sauce, bean or alfafa sprouts, avocado, sirachi, and cabbage!
