Belated Monday

I think most of us were pretty busy today on this ‘belated Monday’.  It’s nice to get that extra day off, but there’s lots of catch up to play upon returning to work.

I got pretty mixed reviews on the 4-day work week. I think the Virginia Mayor’s idea of teleworking from home on Mondays is a better plan. I could totally get down on working from home one day a week (or every day).

My work evaluation never ended up happening today, surprise surprise. I won’t go into it, but my job frustrates me to the max quite often.

I did have a yummy yogurt mess, which made the day a little bit better.

I tried to get out my frustration with an easy 2 mile run, but my legs were not cooperating. My knees and shins were throbbing the whole time I tried to run, so after 12 minutes I just walked the rest of the time. I was disappointed, but I don’t want to push it and get hurt. Hopefully I’ll be able to get back into it in a few days.

For dinner, I really wanted to make these carrots, I just didn’t know what to pair them with. So I went the easy route and had a veggie burger on a sandwich thin.

The carrots turned out really good. They look kind of burnt but it’s just the soy sauce. I pretty much stuck to the recipe, but I used reduced-sodium soy sauce and half the butter.

The veggie burger, however, was very uninspired. I really need to get on the bus and try making my own veggie burgers. I know they’d be so much tastier and better for me. I topped the burger with a little feta cheese and hot sauce. It was okay, just kind of there.

It was about as meh as it looks, definitely needed some more green.

After making dinner, I made lunch for tomorrow. I never do that! It made me feel better about my crappy dinner :)

Now I’m going to do some yoga and then catch up on some reading. I just finished watching 90210 and the new Melrose Place and I feel like I lost many, many brain cells in the process. I must try to restore them before it’s too late!

Hi ho, hi ho, it’s off to work we go

Sorry for not posting last night. My camera went nuts again and my pictures were nonexistent. It sucks because I have no idea when it’s going to happen. I might need to take it to the doctor.

Yesterday was a pretty laid back day. I went on two walks, one was a little over and hour and the other was around 30 minutes. Other than that I was pretty darn lazy.

This morning I woke up and did my strength training with some extra cardio intervals thrown in. It was a nice, quick workout and it got my energy levels up, which is always good.

Breakfast this morning was the usual, but since I can’t post at lunch today I snapped a picture of it. It’s thrilling, I know.

Lunch for today will be this very unphotogenic black bean and couscous salad. Other than the obvious, it also contains some feta cheese, heirloom tomatoes, and red wine vinegar. I had some for dinner last night and it was yummy.

I also brought an apple for dessert. I think it’s a Braeburn? Not really sure though. It’s been hiding out in my crisper for a few weeks now.

I was kind of glad to be back to work today. I am supposed to have a performance review today, which I am excited about. I like hearing feedback from my employers.

Have you heard about Utah’s 4 day workweek experiment? I can’t decide if a 4-day week would be something I would enjoy or not. I mean, of course I would love the extra day off, but working 10 hours would mean not being able to get home before the sun was setting. I like to workout in the afternoons, so that might be a problem for me.

What do you think? Is working 10 hour days worth the extra day off? Does your work currently do something like this?
