Egg Souffle

Hey guys! I don’t really have any food pictures from today due to my appetite being off, but a ton of you asked for a recipe for the baked egg dish I had the other night. I wouldn’t really call this a recipe, it’s more of a technique, but I’m happy to oblige!

Egg Souffle

Ingredients:

One large egg

One large egg white

1/3 cup cottage cheese

1/2 cup spinach

course ground pepper

Cooking spray

Directions:

Preheat oven to 375 degrees.

In a medium pan coated with cooking spray over medium heat, saute the spinach until just wilted.

Whisk the egg and egg white together, then add cottage cheese, spinach and course ground pepper according to taste.

Pour into an oven safe cooking dish and bake for 15 minutes or until egg begins to brown.

Serve and enjoy!

Cafe 7 and Cafe do Brasil

Hi! It’s been far too long and I have so much catching up to do. Unfortunately, I’m not feeling very well so this may be a lot shorter than I’d like it to be. I think I had some sort of allergic reaction and/or food poisoning last night as I was up all night getting sick :( I’m feeling a little better now and I seem to finally be able to keep food down, but I’m so work out from the night of no sleep and being ill that I didn’t go into work today.

Anyways, my weekend was really good up until getting sick – starting with dinner Saturday night at Cafe 7. The concept of this new Oklahoma City restaurant is really cool. You choose between dozens of pasta dishes, sandwiches, salads and flatbread pizzas and choose one side all for seven bucks. They also have a huge selection of $18 bottles of wine. You just can’t beat that.

I had the build your own salad with apple, artichokes, sundried tomatoes, candied almonds and balsamic vinaigrette and a side of pesto pasta salad.

It was really delicious! All the ingredients were fresh and crisp and the dressing was perfect. I also had the soup of the day, which was tomato basil.

We shared a bottle of Malbec with our meal. Vicky says hi!

The next morning we went for brunch at Cafe do Brasil. It’s a really neat restaurant. I’d been there once before for drinks, but never to eat. I loved the bright decor.

I had copious amounts of coffee to offset the previous night’s wine consumption.

For my entree I had the Brasilian Vegetarian.

It was really good! Simple but delicious. I also had a raspberry muffin, just because I couldn’t resist.

After brunch we had some driving adventures, wherein I got lost in my own city. It happens more often than you’d think though. Perhaps the getting lost was a result of my nerves over the afternoon’s activity… a date. I finally gave in and went on one, and I didn’t die.

By the time I got home it had been almost 8 hours since I had last eaten (our date didn’t involve food – we didn’t want it to be too formal), so I dove into an Amy’s frozen dinner.

Pretty good! But about 30 minutes later all hell broke loose. Even though I really don’t think that my brunch or that frozen meal were responsible for my sickness, I’ll probably be shying away from those food options for awhile now.

I feel really guilty for not being at work today, but I’d feel even worse if it turned out I had the stomach flu and I got my coworkers sick. I just really hope I’m back to normal by tomorrow so I can get back in the game! In the meantime, I think I’m going to go back to bed for now.
