Hey guys! The weather here is unreal right now. I left work at lunch and my car read 86 degrees. Crazy! If the wind wasn’t blowing 100 miles an hour, it would be gorgeous. Oklahoma has some gnarly winds. We also have a lot of these.

I’m totally not looking forward to another Tornado season. That tornado actually occurred in a town 5 minutes from where I grew up when I was 12. It nearly wiped out the whole town, and there are still houses without roofs when you drive by the area. Scary stuff. That was a completely random tangent for a food blog. My bad.
Moving on. I thought I had everything planned out and ready to go this morning. I can get ready and out the door in 16 minutes on a good day. I only wash my hair every other day (unless I have a gross, sweaty workout the night before) and I take a bath every night, so I’m not forsaking hygiene I promise.
However, today the zipper was broken on the skirt I was planning to wear (did I mention the whole Murphy’s Law thing yet?), so I ended up leaving the house in a huge rush – thus leaving my cell phone at home. Normally I wouldn’t have cared, but I promised B (guy I’m dating) I’d call him when I left work tonight so we can meet at the theater.
So I went home to get it at lunch, and while there I had some leftover Baked Minestrone.
This was definitely a million times better today. Thirty minutes just wasn’t enough to get the flavors going last night, but after hanging out in the fridge for awhile it tasted like a whole new dish. Love that.
While I was home I got the house ready for tomorrow morning since I won’t be home until bed time tonight. Every night I get my coffee ready, lay out my outfit, put my almond milk and spinach in a blender, pack my gym/work clothes bag, etc. so I did most of that during lunch.
Sometimes it seems like my whole day revolves work around preparing for work the next day. Not that I’m bitter. Except maybe I am bitter. Just a little though. And not about my part-time job. That’s not even work. It’s that 8 hours a day of sitting at a desk that kills small parts of my soul each day. Dramatic? Yes. I told you it was one of those days
I believe in hard work and I’m really just being a big whine bag right now, I’m just really hoping to find a way soon to make all of my work match my interests better. I expounded on this here. So far… no dice. But I have faith that I’ll get there.
Again, moving on. In order to eat up some of the lovely fresh produce that’s bursting from the seams of my fridge, I packed a lovely salad to eat in my hole at the office.
Just a simple salad of arugula, yellow tomatoes (these have a fancy name but I keep forgetting to look at the carton), and 1/2 of a super delicious avocado. Seriously, the best avocadoes I’ve had in months. Are they in season right now? Oh, and I drizzled it all with balsamic vinegar.
Later on I had my new favorite snack – Greek yogurt and peanut butter. But I figured you were sick of that visual by now. And sick of my bitter, random rambling antics. So I will now depart.
What kind of natural disasters do you have where you live?
Like I said, I’m terrified of the storms we get here in Tornado Alley, but I would be just as scared of earthquakes and hurricanes if we had those.

mmm. those avocados do look so good! it is snowing here today. i love snow but i am so ready to be done with it. we get really bad blizzards here and i think once we did have a tornado. way back when. hope tomorrow is top notch!
I love recipes that are better after setting – so flavorful!
We have hurricanes here, had tornadoes in my hometown (enterprise, alabama).
Not sure about avocados?? I’m definitely in the mood for some guac though!
That baked minestrone looks amazing! Definitely want to try it. Ugh sorry about your frustrating day. And I also feel like i spend my life getting ready for the next day. I need my dog to start managing my life and doing errands while i’m at work!!!
Sara
I’m thinking we have strawberries in season!! I got a great deal on them and they are AHMAZING! Tornados are super scary! But I moved to Seattle.. and they don’t have much of anything but rain. Thanks for commenting.. I haven’t figured out how to comment back, pretty new to most of this stuff! (besides reading!!
) And I hear you about the job situation.. gotta hope that someday your dreams will become the reality! I’m glad you’re liking the new job!
PS.. Drew Carey is co-owner of the Seattle Sounders!! Pretty neat!
Mooooove to Charlotte! We haven’t had a hurricane since 1988 and we had a few tornadoes last week, but they weren’t serious. And they weren’t close to here
[like 30 minutes away!] plus we do not get snow. And cool people live here.
I am making that minestrone it looks sooo good.
I also live in the land of tornados. scary!!
I’m in the same work situation right now, so I feel you on that one. However, there are always other options and nothing is forever…
As for weather, OY! I’m in Michigan, so no tornadic activity or anything. However, it can be 40 degrees one weekend and 80 the next this time of year. Plus, crazy ice storms and over 100 inches of snow. For the most part though, we’re lucky enough to not be so into typical natural disasters!
I hate days Murphy is hard at work!!! No real natural disaster around here. Ice storms I guess but they’re few and far between. Hopefully Murphy is out of town for you tomorrow.
We have no natural disasters where I live. The prairies are pretty low key
It does get freezing cold though … does that count?
I think there was a tornado in Saskatchewan once in recorded history. Something like that.
Jolene, um yes freezing cold counts in my opinion. I hate the cold! I don’t see how you do it!
We got two little random earthquakes earlier this year, which brought up all the concern that we’re on the fault line and the midwest is supposed to get some huge disasterous earthquake soon… but those are just ramblings.
And I know how you feel with work- 8 hours of me sitting there and my soul crying… I should really do something about that…
We really only get blizzards and the occasional hurricaine. Kind of quiet and boring.
We get tornados here in Georgia too and if you want to get my heart pumping, just put a tornado warning on TV or the radio. Or the worst is the sound of the tornado sirens!! Soooooo scary!!
Well all have bitter days. You’re are definitely not alone in that thought. It is so frustrating sometimes but everything will work itself out I suppose. I don’t think we have any major natural disaster in Kentucky. I haven’t been here very long so I hope nothing scary comes our way. Have you ever seen a tornado in person? I have always wanted to actually see one (like in Twister) but from a very safe distance, far far away.
Whitney – No I’ve never seen one! I think I would be way too scared to go look at one if there was one close enough. I get in my shelter as soon as the sirens go off. I have dreams about them all the time though, does that count? Lol.
yum…i love love avocado…i love your eats girl, looks so neat…i eat a ton ton more, but thats life!
i really admire your running too…miss that stuff!
i am in canada…no natural disasters other than nasty weather brought up from the states
and the fact that it is too freaking cold!
Oh girl, I definitely don’t post everything I eat! I eat a lot!
Surprisingly, Pittsburgh is, for the most part, natural disaster free. Unless of course you count Ben Roethlisberger, who is a natural born jerk set on destroying the reputation of the ciy one sexual assault charge at a time.
Haha, that’s definitely my favorite comment of the day!
Tornadoes terrify me. Hmm where I live we’re at risk for hurricanes, blizzards, and flooding, so not really many natural disasters, haha.
I still remember being five years old, hiding in a dark closet with my whole family while a tornado literally blew right past our neighborhood. How our house wasn’t damaged I will never know. Now I get to deal with hurricane season!
Sometimes I feel like prepping for my day takes forever too! I guess it’s worth it lol.
Hurricanes sound so scary! We get some pretty bad weather in Scotland, but my city is surrounded by hills so nothing major. Just really wet- but not even real rain like you need an umbrella. Just that kind of rain that is suspended in the air and it doesn’t get properly light all day. Depressing, but not dangerous.
Do you guys have some sort of safety plans for hurricanes? I always wondered what people do!
We totally get tornados and ice storms here too. Once a tornado went through the backyard of the house I used to live in. Can’t tell you how many basement stays we had growing up. The most memorable ones were when we would be in the basement because of a tornado and the power would go out and the basement would start to flood because the sump pump wasn’t able to run.
Good times:) hehe
I hear you about the sitting at a desk for 8 hours thing. Sometimes I think that is more draining and exhausting than my hardest workouts. I’m sure everything will work out for you soon and you’ll be able to get your interests matched up with your work!
