Let Freedom Ring

Happy 4th of July fellow Americans!

One of my lovely coworkers made these cookies on Friday! Aren’t they cute!

As usual for the weekend, I don’t have pictures of all I’ve been doing or eating and I know you have better things to do than read about it anyways. So, I’ll just keep it short and sweet.

Friday after work I worked at the part-time job. We had a packet pick-up for a 5K i worked at on Saturday, so there were tons of people coming in to the store. I love talking to people about running, so it was a blast.

Saturday morning I woke up bright and early to help with a water stop at a 5K. I didn’t take any pictures, but it reminded me of the pictures I have from the kid’s triathlon I worked last weekend. It was so adorable. The kids and the bikes were so tiny.

I really love working events, it’s so much fun and incredibly motivating. I really enjoy participating in races, but working at them is almost as fun.

After the 5K was over, I went to IHOP with my coworkers. I had the Veggie Omelet for me. I didn’t take pictures, but I wanted to mention this because I was pleasantly surprised by the new low-cal menu. Diners are usually so unhealthy, and having a whole page of healthier options to choose from was really great. The omelet was pretty tasty too!

I worked until 3 p.m., and by the time I got home I was really hungry. However, I knew I was having a special dinner later on so I kept it light.

I lounged around the house for a little bit and then got ready to meet Lisa for some pizza! We’ve been trying to go to an Edmond restaurant called Humble Pie since we first found each other’s blogs and became friends. Unfortunately, the restaurant suffered a pretty devastating fire and had to close for a long time. We heard they were open again, so we made a date to go ASAP.

However, when we got there the kitchen was still in shambles due to a leak they didn’t know about. Luckily, they still let us order pizzas, we just had to eat them elsewhere.

We got two personal, Chicago-style pizzas. I’ve never had a pizza like this before, so I was super intrigued.

I loved how the crust formed a sort of “basket” for the toppings, sauce and cheese. It was super crispy and not thick at all.

We got one Spinach and Artichoke pizza.

We also got a Hawaiian pie.

I loved both of the pizzas! The sauce was really garlicky and spicy, which I loved! I ate every single bite.

But the best part about the pizzas is that they were FREE! I guess the owners felt bad that the restaurant was so messy so they gave us both pies for free!

I can’t really give a full review yet, since we didn’t dine in, but the food at Humble Pie is fantastic and I’ll be going back to give you guys a full report as soon as possible.

We ate at Lisa’s house while watching the first two episodes of True Blood. Yep, I’m officially hooked.

I left at about 9:30, went home and finished the book I’ve been reading and then went to bed.

Sleep, glorious sleep. I love it.

Which brings me to now. I just finished some coffee and toast with jelly.

I’m about to go for a run at the lake, stop by the grocery store and then get ready for a night of fun with my lovely family. I love long weekends!

Have a good Sunday everyone!
