As I’ve mentioned, I’m going out of town on Friday. As I’ve also mentioned, I’m not going to buy any groceries until I return.
It’s been interesting, to say the least.
For breakfast yesterday I had the very last of my spinach and the very last of my almond milk in my smoothie.
I’m not sure what breakfast will consist of today. Could be interesting.
For lunch, I wanted a ginormous salad more than I want to be Natalie Portman.
Sadly, the salad bars in my area are weak sauce. Reason #4,506,789 I can’t wait for Whole Foods to open next year.
With much chagrin, I still went to the sub-par bar and laoded up.
They don’t even have spinach available as a lettuce option. Pssshhh. I did dominate that salad though, I always have intense veggie cravings when I know I don’t have any at home. Classic “want what you can’t have” syndrome.
I snacked on a nectarine in the afternoon hours. Nectarines are delicious right now. Peaches probably are too, but I haven’t found any that look that great.
After work (which was frustrating yesterday, thus the reason I haven’t mentioned it), I headed straight to the gym for a run.
I had originally wanted to go to Body Pump, but I was still sore from Sunday’s class and my hammies were crazy tight. So a run it was – on the dreadmill.
I ran around 2 miles steady state, took a 3 minute walking break and then did 8 minutes HIIT. I ended the workout at 3.03 miles and called it a day.
It ended up being a scorcher yesterday, unbeknownst to me, and I could tell I was in no way properly hydrated for the run. My head was pounding when I stepped off the treadmill and my stomach was churning.
I’ll have to take better precautions when I start my marathon training next month.
After my stomach settled, I tried really hard to make some sort of dinner out of the scant food in my house. I came up with something that could have been pretty tasty – beans on a bun.
Sadly, shortly after that photo was snapped I attempted to add Frank’s hot sauce to the mix - the lid fell off and I had a pool of hot sauce on my plate and two little soaked bean buns. Fail.
I tried to save them by immediately replating, but the damage had already been done. I like hot sauce, but it was just a bit ridiculous.
Instead, I resorted to a peanut butter and jelly on a bun (which just doesn’t have the same phonetic ring to it.)
I have been deliriously tired in the evenings lately, despite the fact that I’m sleeping better. I started some laundry and began to pack for my trip, but by 9 p.m. I was in bed reading and by 10 p.m. it was lights out.
I got around bright and early today though, and I’m pumped because it’s my Thursday! Only two more days of work until my 4-day weekend.
What are your favorite items to see at a salad bar? I like dark, leafy green, plain balsamic vinegar as a dressing, a variety of cooked and raw veggies, beans and cottage cheese.



Obviously I like bacon and cheese at salad bars. But I get really excited when I see arugula, and just plain oil and vinegar! I don’t really like salad dressings.
I love veggies of course – especially some hot peppers! I also like when I see crumbled blue cheese – yum! I also get excited when there are raw nuts – I love the crunchiness they add to salads.
I’d love to see a little bit more of cooked veggies at a salad bar- those are always far and few between.
And I throw a hissy fit if there isn’t at least one vinagrette option. I’m such a brat…
My dream salad bar would ALWAYS have:
hard boiled eggs
beans: kidney, black, and/or chickpeas
avocado
I love iceburg… I know weird for a foodie to prefer iceburg over all of the other exotic lettuces! And on top of it I like hot banana peppers, pinto beans, avocado, and lots of pico de gallo!!
I find it difficult to find good salads/salad bars, too. I like the same stuff you like, minus the beans and cottage cheese.

I like when salad bars offer roasted veggies because I’m simply too lazy to make them myself! That’s too bad about the hot sauce accident – those sandos sounded fantastic! I hope you have a good Wednesday
I’m craving a giant salad also this week, may have to get one tomorrow. Sorry about the hot sauce incident, that would be enough to make me throw a temper tantrum.
I can’t wait to have an Whole Foods as well—my bank account will be much lower when that happens!

Ive never been to an actual salad bar – how sad is that?
The hot sauce incident is upsetting. Ive done that type of thing SO many times! Once, I was sprinkling red pepper flakes onto some veggies I wanted to grill and the lid fell right off. Im still a little upset about it. They were going to be so good!
I love it when they have black olives, sunflower seeds, cottage cheese, cucumber and avocado.

Sorry about your beans on a bun, they looked very tasty! Things like that always happen to me with pepper, I tend to accidentally open the “scoop” side instead of the “sprinkle” side.
I am definitely with you on dark leafy greens and plain balsamic vinegar. I also really love seeing olives other than plain black and just plain tuna instead of “tuna salad”.
I love adding cauliflower, chickpeas, shrooms . . . . yummy. I am so not a fan of lettuce salad. BOO! I’m ready for WF to open next year too!! WHAT WHAT!

Spinach, beets, and peas are my favorites to see at salad bars! Jasons and soupersalad don’t usually let me down, but I wont look back for a second when WF get here. Is there a WF where you’re going?

Love salad bars with wonderful greens that is more than just iceberg lettuce! I also love olives, cukes, and peppers!
I like variety in a salad bar. Nothing like a sparse spread to turn me off!
I love the roasted sunflower seeds at the end. I know that’s cheesy but they are such a nice topping.
Little gremlin loosened the hot sauce cap,eh?! That sucks.
I have never hit up a salad bar before but when I pick up a pre-made salad the things that hook me are: bacon,cheese,spinach and cherry tomatoes
