First thing’s first. I’ve got to confess… I’m drinking coffee right now.
I went two days without it, but I was up all last night with a headache and I had to give in. The plan is to just drink less of it for now – like two or three cups per week.
I don’t like tea, and when I do drink it, it tends to upset my stomach so my only other lighter caffience option is diet coke, which also gives me a headache.
So, back to the 20 Salads in December Challenge. I’m so excited that so many of you are going to join! Woo hoo!
Since I was stressed and feeling sorry for myself yesterday, I didn’t really clarify what the challenge was going to be about. I shall do that now.
My Unofficial Rules for 20 Salads in December

Obviously, the main goal is to eat 20 salads in the month of December. Hence the name.

I would prefer for my salads to be homemade. However, because I’ll be out of town for a week, this won’t be possible. My personal goal is to have at least half of them be homemade.

Creativity is the key! Salads don’t have to be boring. I’m going to try really hard to make them as interesting and delicious as possible.
That’s it! Easy.
It should also be noted that this challenge is in no way a weight-loss goal. I just know I slack on my veggie intake during the winter, and Lisa and I thought this would be a great way to get them in! Check out her post about it for even more info.

Great challenge idea!
My challenges for this month are to pack up and move! Our goal is to really go through all our stuff and get rid of stuff we don’t use or need instead of moving it with us.
I also want to find new items for a good price for our new home
Yay! Moving is so tough, but when it’s into your very own home it will be so fun!
I love your 20 salads idea! I would join, but my appetite is so finicky lately, I am afraid this would just push my hormone raging body over the edge on some days.
But I can’t wait to read along with you!
My goal for December is to clear out the future Baby Cake’s room and to find a crib!
That’s a fun goal! Can’t wait to see his room!

The best tip I can give you for salad creativity is check out some new recipes for salad dressing. My fav one I’ve made so far is one that involves peanut butter and honey…

I would love to join your 20 salads in December, I don’t know if I can stick with it though, ahaha. but I’ll give it a shot! I don’t think drinking coffee is bad at all. I usually try to stick to 1-2 cups per day. More than that, and I start to feel jittery!

My goal for December is to run a bit more. Since I’m not training for anything, I have been running 12 miles a week. I haven’t ran in a week now so I’m itching for a lunch time run today!
My running has pretty much been nonexistent lately. I feel ya!

I definitly need to google some fun salad ideas instead of just adding a big pile of lettice under one or two meals a day ahaha

with the salad challenge that is, NOT the coffee consumption. until i start having the shakes and are unable to sleep at night, i refuse to give up my joe. he’s the only man in my life i have right now.
and yayyy for getting back into running! i am doing the same thing. in fact, i ran 1 mile for the first time in MONTHS on sunday. baby steps, right?

I’m doing a salad challenge with all of you guys!! Yeah!!
My PERSONAL goal for this month is to exercise DAILY. That’s right- DAILY. Either cardio or weights or something (does sledding count? It should). I definitely need to up the routine during holidays. Especially with all the yummy food I’m eating!!
That’s a lofty goal sissy. Good luck getting it done on Saturday after your party. Oh, and I’m pretty sure taking your SIL to the airport is considered a workout. Or a good deed. Just sayin’.

ooohh, this is a great challenge!! I totally want to do this! I love salads, so I could totally have one every day at lunch.
