Salad #1: Slow Start

At lunch today I went to the grocery store to pick up some salad fixins’ per the 20 Salads in December Challenge.

However, the grocery store near my work isn’t the best so the result was kind of lackluster.

Still, there were tons of veggies, which is the whole point.

Since I had to prepare my salad at work, I didn’t want to have to do a lot of shopping. So I picked up things that were easy to assemble.

  • A bag of pre-washed veggies (broccoli, carrots, peas, sprouts)
  • half an avocado
  • grape tomatoes
  • crumbled goat cheese
  • toasty bread

In my opinion, no salad is complete without a fat souce (or two) and some doughy carbs. Just sayin’.

So, even though my salad wasn’t a masterpiece I was still happy with it. Lots of green freshness + I was super full after I ate it. Can’t beat that.

As for dressing, I just used a bottled balsamic. Sigh.

Growing up my mom, who is an incredible cook, would make a salad with homemade salad dressing almost every night.

I have several recipes from her that are amazing, but I haven’t had time to whip any up yet.

Homemade dressing really does take a salad from just okay to amazing.

  1. I ate a Caesar Salad at lunch today w/ olives and shell pasta noodle things. It was super yummy! AND they had pineapple w/ strawberries and blueberries. Pure fruity bliss if you ask me :)

    AND I have a question- I will be making a spinach salad to go with dinner tonight…does this challenge include having more than one salad in a day? Is that legal?

    Because if it is, that means I’m 2 for 20 on Day 1. WOO HOO!!

    I don’t have just one favorite dressing- how ’bout a few store bought and a few home-made ones?? I like lots of them- Marzetti’s Sweet Italian or Marie’s Creamy Italian Garlic…home-made Blue Cheese…home-made dressings that have olive oil and vinegar in them…that list is endless, really.

  2. not gonna lie.. ranch. homemade ranch. you know.. with whole milk and real mayo and hidden valley ranch seasoning. very favorite. i could eat 20 salads if i could eat that stuff every day.

    obviously, i can’t do that, so my healthier option is watered down hummus+mustard.

  3. If you have to go the bottle variety… I would suggest running by Trader Joe’s (can’t remember if you have one close? I know everyone discusses the proximity to them, but can’t remember what you said…). They’ve got a fat free basalmic that is to die for that I keep in my break room for back up.

    And I agree- some sort of bread/crouton/cracker is needed to make my meal feel complete.

  4. I always make my own dressing, but its more the cost factor than anything else. Its also never anything impressive. I usually just throw random amounts of vinegar, oil, and whatever else into a mini tupperware container and hope for the best. :)

  5. We love homemade vinaigrettes in this house! White balsamic vinegar + olive oil + salt/pepper/oregano is our all time fave, The Man requests it all the time. Love all the fresh veggies girl, plus the addition of avocado, mmmm – I haven’t had one of those in soooooo longgggg!!

  6. Best I’ve EVER had was in Ireland; some sort of thick, creamy prawn-and-salmon based dressing. I get chills just thinking about it…..

    Otherwise light ranch.
