I have a confession to make. You all know my love for Morningstar Farms Buffalo Chik’n nuggets, right? Well, as much as I adore them, I almost always end up throwing the last 4 or 5 of them away.
How wasteful, right? I’ve always blamed it on the fact that I live alone, because it takes several meals before I can use a whole box and by the time I got to the end they’re kind of freezer burned.
Last night, however, I vowed to get some use out of the last remaining nuggets and ended up with fantastic results. This whole budget thing is really teaching me some valuable lessons.
I had some leftover pesto from a pasta dish I made last week, leftover mozzarella cheese from my pineapple pizza this weekend and some pitas that need to be eaten ASAP. Thus, the Buffalo Chik’n Pesto Pita Pizza was born. And it was gooood.
It’s times like this when I rejoice the fact that I’m not a millionaire.
Millionaires surely don’t stumble upon thrifty little miracles such as this. They eat foie gras and drink thousand-dollar champaign, but they miss out on the simple pleasures.
At least, that’s what I’m going to tell myself anyways
Before this pizza was brought into my life, I also got in a second 3-miler for my half mary training. It was a good run! I’m working a bit on my speed since my long runs aren’t as far as I was used to the last time I was training. It’s a nice challenge.
I can’t believe another week is almost over. It seems like full weeks go by faster than short ones sometimes. I’m okay with it though, because tomorrow my birthday celebrations shall begin!
