Soup

Did you all have a wonderful weekend? Mine was alright despite the fact that I was sick the whole time. Nothing very exciting to report though.

I ate a lot of spicy foods. I still crave spice when I’m sick. Dinner Saturday night was a slow-roasted sweet potato with 2% Fage, shredded cheddar and lotsa Frank’s.

I probably pushed myself a little too far with workouts this weekend. After I worked at the part-timer on Saturday I went to the gym to do 3 miles on the elliptical and Sunday morning I ran my 5-miler in accordance with the training plan. It was rough, but not as bad as I was expecting it to be. I paid for it later though, as I started to feel about ten times worse as the day progressed. Oops.

Later on I went to my mom’s for soup. She was upset that she didn’t get to spend my real birthday with me and wanted to cook for me. I was cool with that. She made butternut squash soup, corn chowder and goat cheese and aparagus panini. I had a little of everything.

Then I had leftover corn chowder for dinner. You can find the recipe on my Foodeas page, it’s a good one.

Even the soup couldn’t heal me though. I was in bed before 8 p.m. last night.

On a completely random and unrelated note, how did I not know that there was a mango Chobani flavor? Why hasn’t anyone blogged about this? I tried it over the weekend. Not as good as the pineapple, but still delicious.

Well, I managed to get an appointment with my incredibly hard to get into doctor in a bit, so I’d better get some work done before I have to leave. I probably wouldn’t have come in this morning, but I have a proposal to deliver. In the cold… in heels… while sick. Joy.

What is your favorite way to enjoy a sweet potato? I have to admit that I’m actually not that crazy about sweet potato fries anymore. I like it as featured above or in soups/Indian food and that’s about it.

  1. I do love me some sweet potato fries… but I’d say my favorite is just a straight up baked sweet potato. Hope you start feeling better ASAP sweetie!

  2. I’m torn between baked and topped with peanut butter or sauteed with green beans and oregano then topped with lemon juice and feta.

    Hope the appointment at the doc goes well!

    • I would have never thought to mix peanut butter or coconut butter in with a sweet potato. That sounds like dessert to me!! How tasty!

      • I have to be in a certain place for “sweet” sweet potatoes. I prefer them savory, but sometimes when I’m having a really savory dinner I’ll pair it with half of one with pb and it makes for a nice “dessert”.

  3. I love just a baked sweet potato with a little butter. I HATE when people put sugar and cinnamon on sweet potatoes – ruins it for me.

    Hope the Dr makes you feel better – and good luck with your presentation!

  4. i like sweet potatoes just baked with brown sugar and a dollop of cinnamon butter…. mash it all together and yummo…

  5. Feel better soon, chickie. I’m glad your mom got to baby you a little. My fave way to eat a sweet potato is the potato fry – fried only please no baked – and “baked” in the microwave w/ nothing on it. I’m so boring. :)

    I like baked sweet potatoes with nut butter. Or with cinnamon/butter/agave. Yummy.

  7. I’m not huge on sweet potatoes. Although my friend made a mean casserole with brown sugar and marshmellows…. I could get behind anything featuring marshmellows.
