Hey ya’ll! I hope you guys had a fabulous weekend. I would say I did. Nothing fast-paced or crazy, but I’m finally starting to feel comfortable here and actually got caught up my sleep (until last night anyways).
Yesterday was the first day I’ve really felt at home in my new apartment. I’m not sure why, but everything just kind of fell into place.
I slept in, had a leisurely breakfast on the balcony, cleaned, went to yoga at the gym (more about all of that in a later post) and then truly broke in my new kitchen. As in, I actually cooked a real meal.
I made Jess’s Creamy Caprese Pasta, because Caprese is my favorite thing in the world and because Mrs. How Sweet’s recipes never fail me.
It felt so good to actually chop things – especially these gorgeous tomatoes.
I used mini heirlooms instead of grape tomatoes because they were on sale at TJ’s.
Before I left Oklahoma, my mom gave me some hand-me-down pots and pans to cook with, which are a huge improvement over my previous ones – circa 2004. I love them and they made the cooking experience much more enjoyable.
Noodles, ‘maters, cheese and basil – there aren’t many things in life I like more. Mmmmm.

As I was sitting at my bar eating this meal, on the bar stools I put together myself, I felt a sense of extreme calm and satisfaction. In the midst of all of the chaos and stress that this move has caused, I keep getting those little moments of clarity when I realize that this is exactly what it should be and I’m so blessed and happy to be here. Great feeling.

That feeling kind of sneaks up on you.I almost sent you a message yesterday at the last minute bc I was like 45 min away from DC near Baltimore to see if you’d want to meet up but I only had like 2 hours before I had to turn around and head back home so I figured it wouldn’t be worth it. But next time I’ll be a better planner

There is a vegetarian food festival weekend of June 18 that could be a fun daytrip?! I think Brittany is going to either be going or volunteering at it too so we could all meet up?!

I love when that feeling sneaks up on you. I get that feeling when I’m on the beach in Bethany. Even though I spent more years in VA and PA, that beach always feels like home to me.

I’m so happy for you. Moving is SO hard and when it finally settles down, it’s such a relief.
