On edge

At my “real job” I typically either have days where I can be totally in a bubble and not have to talk to anyone (besides via email of course) and days where the entire day seems to be spent in meetings.

Usually, I embrace meeting-filled days because they make the time go by faster, but lately I’ve had to lead some of these meetings. It puts me on edge! It’s not that I am afraid of public speaking, I just hate doing it unless I feell 100% knowledgeable about the subject matter.

So, needless to say, I had some major nerves today, especially since the meeting I had to lead was at the end of the day. It’s a good thing I had delicious food to distract me.

Lunch was the last of my leftover baked risotto.

During my lunch break I had to run out and buy protein powder. I’ve been meaning to do this for over a week now, but kept putting it off because that stuff is so dang expensive.

At the health food store I picked up this vegan gem.

I consider this to be Crap Free because there aren’t any preservatives and the sugar content isn’t too crazy, but that’s a highly subjective opinion.

I’m also most likely going to eat this pear on my way home because I clearly enjoy eating in the car.

Even though I don’t have to work at the running store tonight, it’s still going to be a busy evening. I have to ammend my tax return (argh), run a few errands at the mall, and make attempt #2 at running 6.5 miles. I hope I can do it!

Do Good

Hey guys! How is your Monday treating you so far? Mine has been quite productive, I think. I just finished up the full-time job and I’m about to head to the part-time gig.

I was a little worried that I would start to dread job #2 after working a full day, but luckily I love it so much that going in feels like a treat. I was actually a little bummed yesterday that I didn’t have to go in.

Know what else I love? Having leftovers to have for lunch.

Baked Risotto Primavera

I brought in another serving of the Baked Risotto Primavera from yesterday. So good and cheesey. Perfect comfort food for a stressful day.

Later on I had my first ever blood orange.

I was so excited to spot these at the grocery store on Saturday. They are delicious little buggers.

For a more filling snack I had some plain nonfat Greek yogurt with peanut butter. So good.

Cloak of Positivity

Yay for Monday! My favorite day of the week!

(Did you believe that? I’m trying the whole fake it ’til you make it positivity thing, so let’s roll with it).

This week is full of possibilities. Lots of deadlines, lots of fun activities, lots of errands to finally check off the to-do list. Good times!

Yesterday was a good day, and it started with a good breakfast. I tried Oat Bran for the very first time!

I’ve always wanted to try oat bran, but I usually just end up buying oatmeal because it’s more familiar. I’m glad I bought this though, because oat bran is so much more voluminous than regular oats! I was impressed. I had it with some almond butter, sliced strawberries and a dollop of plain Oikos.

These bowls take awful pictures. They make everything look super red. I like red though, so it’s all good!

After eating that I had to finish up the laundry, wash my sheets and do a lot of work from home. Not the funnest part of the day, but it felt good to get it all done. I had to make the executive decision to post-pone my run until today. There just wasn’t enough time and I didn’t want to be stressed all day trying to rush though everything.

I’ll have to do the 6.5 miles after work tonight at the gym. Not ideal, but it will work.

Eventually I made lunch, which was Baked Risotto Primavera from this recipe. The only changes I made were using half veggie stock/half water to reduce sodium, and only using 1 cup of the Parmesan cheese. It turned out wonderfully!

This was a really good dish, I highly recommend the recipe. Pretty crap free too! I’m excited for the leftovers.

I really wanted something sweet afterwards, so I had a Dannon Honey Greek yogurt.

After I ate I got ready for my date. We went to the Oklahoma Thunder vs. Portland Trailblazers basketball game. (The Thunder lost by three… sad.) And after that had a quick dinner next door. It was really fun and much more relaxed than our other dates have been. I’m starting to think there may actually be something there…

I got home around 10 p.m., talked to my Mom for awhile, took a bath and hit they hay. I certainly have NOT had any trouble falling asleep lately. That is a huge perk of being so busy.

The morning has already been really productive, and I’m going to put on my cloak of positivity and kick butt this week!
