Hot Sauce Art

Good morning friends! Thanks so much for your input on yesterday afternoon’s post.

To be more clear, I don’t think anyone can 100% blame their parents for their troubles at all I was just upset by the lack of support. It hurt my heart.

However, coming home yesterday to find that the apartment staff had been true to their word and shampooed my carpets after the leak really perked my heart right up.

The floors looked so clean! I was a happy lady. I’m not sure it took all the smell away, but it’s a start I suppose.

I had to work at the part-timer after work so I got home rather late for me, I’d already eaten a large snack before work so I didn’t really need a big dinner.

I started with one three clementines while tidying up and getting everything ready for today.

I can’t believe I didn’t mention these particular clementines when I was talking about food obsessions yesterday. I’m pretty sure I ate close to 20 clementines on Sunday. They were so refreshing after my long run, I just couldn’t stop. I might turn into a clementine.

But I ran out, so I couldn’t eat another 20 for dinner. Instead, I had my other obsession – toast with an egg and Muenster cheese with abstract hot sauce art.

Today is going to be a crazy day at work, but the good news is I have a facial afterwards!

I bought a Living Social deal for a facial and brow shaping last year and finally found time to use it. My brows are in serious need of some shaping, or rather, a hacksaw.

Any tips for getting mildew smell out of carpets? They offered to lay new carpet, but since I’m likely moving in a few months I don’t really want to go through the hassle unless I absolutely have to!

Sad Realization

Goooooood Morning everyone! It’s football time! I had a very relaxing night last night, and I’m feeling quite a bit better today. I still feel off, but I just did an hour of yoga and I’m hoping that by taking really good care of myself this weekend I can avoid anything serious.

Dinner last night was a recipe I saw on Jessica’s blog a few weeks ago – Pumpkin Gnocchi.

This was really fun to make, even though I’m not very good working with dough.

I made a quick white sauce by just using 1/5 cup of fat free half and half and 3 tablespoons of asigo cheese with salt and pepper.

Then I came to a sad, sad realization. Even though this recipe was fun and easy to make – I simply do not like pumpkin. :(

My first clue was when I didn’t really care for pumpkin oatmeal, and then when I despised my Starbucks Pumpkin Spice Latte, and now it is clear – if I don’t like pumpkin in pasta form I’ll never like it.

I’ve never liked pumpkin pie, but I thought it just had to do with the texture. I thought if it was in a different texture I would enjoy it – but nope.

So, I’m officially a blogger who doesn’t adore cinnamon and who dislikes pumpkin! If you would like to ban me from blogging, I will understand ;)

I followed up my meal with a few celery stalks.

Popcorn with hot sauce! Oh, this was GOOOD! I ate this little snack while watching Ugly Betty and then took a bath and read some more of The Time Traveler’s Wife before turning in for an early bed time. I’m such a rock star, no?

I just finished cooking up a big pot of my mom’s corn chowder and I’m getting ready to head over to my brother’s house to watch the game! Good luck to everyone’s teams today!!! I’ll have the soup recipe posted sometime soon.

We’re not worthy

Hello! I was a lost blogger again yesterday. Just another one of those days where I felt like my pictures were unworthy of being blogged about. I was dangerously low on food so most of my eats are uber random. I’ll show them to you anyways, because that’s all I’ve got.

Friday’s evening eats included this times two.

And some of the roommate’s nachos, because I believe you should never make a friend eat nachos alone. We had lots of fun on Friday, stayed up wayyy to late. And of course, I forgot to take any pics to commemorate the evening.

Saturday was semi-productive. I did a lot of cleaning and organized my entertainment center, something I’ve been putting off for ages. Food-wise, however, not as productive.

For breakfast I had an egg white wrap – hangover food at its best cheapest.

For lunch a few hours later I ate perhaps the most random thing to ever be featured on this blog – corn with half an avocado doused in homemade asian dressing.

It was good though. Just strange. Other eats included a wrap of nothing but melted cheese and hot sauce.

For dinner, the roommate and I decided to go out because I had no food and was getting a bit stir crazy. We went to a place called the Iguana Lounge.

I wasn’t very hungry, so for once I did not overstuff myself. This is hard for me to accomplish when there are these available.

I ordered the grilled vegetable taco salad for my entree – it was just meh.

I had a cup of coffee after dinner. I love getting coffee at restaurants for some reason.

After dinner, the roommate wanted some ice cream. We decided to walk to the Coldstone downtown (btw this walk was the most activity I got in yesterday). But when we arrived the line was like 50 deep. She decided she didn’t want it that bad.

The next plan was to walk to the little convenience store by our apartment so she could get a pint or something. Well, they didn’t have ice cream either. Mission unaccomplished, but there was a lot of live music we got to listen to and the weather was gorgy. All in all it was enjoyable.

I bought a mini pack of Hot Tamales at the convenience store. These are my fave candy ever, and the little boxes are so cute!

After eating my candy I took a long bath and read. Then turned in at about 11 p.m. I can’t be hang with the going out two nights in a row, haha.

Alright that’s all I’ve got for now, but I’ll try to do better next time. Hope ya’ll are having a fab weekend :)

Black Bean and Plantain Tacos

The weather today was so fitting of the first day of fall. It’s strange because yesterday (the last day of summer) we had a high of 84 degrees amd the sun was shining, and today it’s been super chilly and cloudy. I think Oklahoma took the season change pretty literally this year, haha.

Shortly after posting this morning I decided to warm myself up with a cup of tea. I had a muffin along with it to prevent any stomach problems.

I didn’t get nauseated, but I think my muffins have passed their prime So I only ate about 1/3 of it. It tasted a bit funkay.

It was hard for me to hold out on having my lunch when it was just staring at me longingly from my bag. I managed to hold out until my usual hour though. The peanut butter and jelly was lovely, as they always are.

An hour or so after eating my sammie, I had a kiwi. Yes that is a blog in the background. I was on my break, so it was allowed :)

This kiwi was a tough little guy, very chewy. After I ate it I was super full, stuffed almost! But that didn’t stop my from grubbin’ again later in the afternoon.

This was a snack I’ve been pretty dang excited about, because it involved the return of Greek yogurt to my life! I had a mini container of Oikos honey flavored yogurt with half a sliced banana on top.

I’m not really sure what I thought about the honey flavor. The reason I bought it was because it was cheaper than the big container of plain yogurt, but for the same number of ounces. I think it would be better with granola, so I’m going to try that next time.

I had almost talked myself into taking an unscheduled rest day from exercise because I’m worried I might be coming down with something. But when I got home my roommate asked if I wanted to go on a walk. It was a gorgeous day outside so I definitely jumped on that opportunity. It wasn’t really a long or hard walk, but it felt so great. Exactly what I needed on a day when I wasn’t feeling too great.

Dinner tonight was an old fave you seen before on Low… and Behold! One of my favorite combinations ever – Plantain and Black Bean tacos!

I make these different every time, but the plantains are always the star. I “fry” them in a little bit of olive oil.

Then add some microwaved rice (because I’m lazy, feel free to make your own). The version I used is kind of amazing though, because it only has 10 mg of sodium. Pretty impressive for packaged rice. Along with the rice I added some black beans. I used the dry variety but canned beans work too. I also added salt, pepper, hot sauce and garlic powder at this point.

I made a ton so I could have lots of leftovers :) While all that was cooking up, I heat up my whole wheat tortillas.

Then I threw it on a plate and feasted, paired with an ear of roasted corn.

Yum! I could seriously eat this every day. Love it!

I’m currently watching Biggest Loser – they all did so great on the challenges. I’m REALLY looking forward to catching up on my sleep tonight. I hope when I wake up this weird semi-sickness is outta here.

Five Days of Oats: Day 4

I was cleaning out my office cabinets yesterday and came across some Cranberry Pomegranate Green Tea I’ve had for forever. I decided to have a mug of it this a.m. since my office was kind of chilly.

As I was sipping my tea, I wondered I don’t drink it more often- it has so many health benefits and it’s yummy! But after I finished the mug, I suddenly became very nauseated. I forgot that tea can give me problems unless I drink it with food. I guess that’s why there’s still so much of it left!

For lunch today I had savory oats. You knew I could not have oats 5 days in a row and not douse at least one batch of them in hot sauce. Come on now! It may be rather controversial of me to say this, but in the battle of peanut butter versus hot sauce – hot sauce wins with me every time.

This bowl included 1/2 cup oats, 2 egg whites, 1/2 an avocado, hot sauce and a dusting of feta. Foodgasmic for sure.

I love sweet oatmeal, but I am far and away more of a savory person than a sweet person so I was super satisfied with this lunch.

Only one more day to go! I wonder if I’ve lowered my cholesterol this week, bahaha.

Belated Monday

I think most of us were pretty busy today on this ‘belated Monday’.  It’s nice to get that extra day off, but there’s lots of catch up to play upon returning to work.

I got pretty mixed reviews on the 4-day work week. I think the Virginia Mayor’s idea of teleworking from home on Mondays is a better plan. I could totally get down on working from home one day a week (or every day).

My work evaluation never ended up happening today, surprise surprise. I won’t go into it, but my job frustrates me to the max quite often.

I did have a yummy yogurt mess, which made the day a little bit better.

I tried to get out my frustration with an easy 2 mile run, but my legs were not cooperating. My knees and shins were throbbing the whole time I tried to run, so after 12 minutes I just walked the rest of the time. I was disappointed, but I don’t want to push it and get hurt. Hopefully I’ll be able to get back into it in a few days.

For dinner, I really wanted to make these carrots, I just didn’t know what to pair them with. So I went the easy route and had a veggie burger on a sandwich thin.

The carrots turned out really good. They look kind of burnt but it’s just the soy sauce. I pretty much stuck to the recipe, but I used reduced-sodium soy sauce and half the butter.

The veggie burger, however, was very uninspired. I really need to get on the bus and try making my own veggie burgers. I know they’d be so much tastier and better for me. I topped the burger with a little feta cheese and hot sauce. It was okay, just kind of there.

It was about as meh as it looks, definitely needed some more green.

After making dinner, I made lunch for tomorrow. I never do that! It made me feel better about my crappy dinner :)

Now I’m going to do some yoga and then catch up on some reading. I just finished watching 90210 and the new Melrose Place and I feel like I lost many, many brain cells in the process. I must try to restore them before it’s too late!
