Pad Thai Fantasy

Well, the boathouse run got cancelled yesterday due to heat, which was kind of sad. However, I was honestly not that bummed out since it meant I could get my actual planned training run in instead.

I hit the treadmill for a 4-miler and kept it slow and steady throughout. I usually want to pull my hair out during dreadmill runs, but this was wasn’t so bad. I did make the mistake of wearing a cotton shirt though. Ick.

The rest of the day was fairly dull. This tends to happen when you’re broke. Case in point is this, the most randomly awkward lunch ever.

Since I didn’t get home until super late Monday night, and because I don’t have much food to my name right now, this was pretty much all I could throw together.

On the plate o’ randomness you have – one whole cucumber jaggedly sliced with the world’s dullest knife, one whole avocado, two Laughing Cow cheese wedges and one Sweet Corn Vitatop.

Both the avocado and the cucumber had seen better days so I had to leave about 1/4 of each, but I still managed to fill up on my random lunch.

Later on we had cookie cake to celebrate a coworkers birthday, which was good because I hadn’t packed any snacks.

After work I went to the gym for the aforementioned treadmill run and then returned home to shower and cook up a real meal.

I made a tofu pad thai that was good, but not great. It is one of my great fantasies in life to be able to whip up an authentic version of pad thai so that I can enjoy it whenever my heart desires.

I tried this a while ago, and the result was great taste but terrible texture and not enough spice.

This version had the perfect amount of eye-watering spice and the noodle texture was spot-on, but the taste wasn’t quite there. I’ll get it right one of these days though.

Anyone have any good pad thai recipes?

Spinning Fear

Hey guys! I’m back to the old routine, so my posting should return to normal. I can usually only squeak out one post a day on the weekends for some reason. You’d think I’d post more when I am just sitting around the house and less when I’m actually being productive, but that’s just not the case for some reason.

So… let’s see. Oh yes, here was my lunch yesterday. Looks like someone has been hiding something from her lovely readers.

And that something would be the mass quantities of carrots and Sabra Roasted Garlic Hummus I’ve been consuming. When I ran out of carrots I moved on to toasted sourdough Enlgish muffins which I ripped up and dipped into the chickpea goodness. That orange on that there plate was sour and gross, which made me sad. But I ate it anyway.

I’ve also been drinking lots of tea in this sassy mug that my SIL got me for Valentine’s Day.

Get it? Haha, I thought it was adorable.

Sometime after the tea was drunk (or is it drank?) I headed out to the gym to conquer a fearspinning. It’s not the actual workout that scares me about spinning, it’s that I hate going into a class and not knowing what I’m doing and making a fool out of myself.

Well, make a fool of myself I did… Apparently they turn the lights out in the room, so I thought the class was cancelled and went up to the front desk to inquire as to why this was. By the time I learned of the lights off sitch, I was late for the class. But I really wanted to try it so I went in.

Then, for the life of me I could not figure out how to get my bike set up (which was my major fear), but some nice guy eventually helped me out. However, the seat was still way too high and I could barely reach the handle bars.

But even though I felt like a total goofball with no clue what I was doing – I totally loved it! I definitely plan to go back again and hopefully get there in enough time to set the bike up right.

So, New Year’s Resolution – eat your heart out ;)  Facing my Spinning Fear was one challenge I really hoped to overcome this year, and I’m definitely glad I did.

When I came home I showered my sweaty beast of a self and then made the quickest dinner I could think of.

More Carba Nada noodles with two light Laughing Cow wedges. This is quickly becoming an addiction. I need to figure out where I can buy these noodles in OKC.

I also had some shelled edamame and reduced sodium soy sauce.

Pretty random dinner, but what can I say – Random is my middle name :) Not really, my middle name is Sue.

Anywho… that’s about all for today. I kind of forgot what this whole “work” thing was about, but as it seems there is quite a bit of it that needs to be done today.

3-course dinner + questions

Hey guys! It’s been one busy morning already! I’m sure this day is going to just zip by :)

I discovered last night that I should definitely have a concrete dinner plan if I’m going to go to the gym right after work, because when I got home I was hangry. I whipped up the quickest thing I could think of – eggs.

That’s three egg whites scrambled atop a bed of arugla and enhanced with a light Laughing Cow wedge and hot sauce. Or at least that’s how I’d describe it on a menu, haha.

That wasn’t nearly enough food to fill the void though, so I had some roasted broccoli as a second course.

Kicked up a notch with red pepper flakes of course.

And for dessert, I had several handfuls of cereal while getting all my stuff laid out for today. I really should have just put a serving in a bowl and put the box away, but coulda woulda shoulda, right?

I’ve decided that I’m not even going to attempt working out in the morning this week, since I’m having a bad sleep cycle right now. It’s not worth it to set myself up for failure every single morning. And I’m kind of liking my evening workouts right now, it gives me a chance to sweat out all the stress that builds up over the work day.

After watching the bachelor last night, I did 30 minutes on the elliptical at home and then showered and called it a night.

Now, for some questions and answers! I’ll be doing these at the end of my posts when I have questions to share. Sound good? Today’s round focuses on general information about me + my hopes and dreams.

But first off, Jolene asked how the whole Ask Me Anything thing works.

What kind of car do you drive?? What do you do for a living?? What does your new apartment look like?? Do you collect anything?? What are your favorite things to buy at the store??

That’s a lot of questions in a question, haha! Let’s see… I drive a white Lexus IS250. It’s one of the cars that Toyota has had to recall, but so far I’ve not had any problems. Supposedly there is going to be a solution in the next month or so. I’ve only ever driven little cars. I’m a terrible driver and trucks/SUVs do not work out well for me at all.

I do marketing and proposal writing for a technology firm in Oklahoma City. We mainly work for the government. It’s a good job, but not terribly thrilling.

I’ll try to take pictures of my apartment and show them soon! It’s nothing too exciting, but I like it. :)

I can’t really think of anything that I collect, but I do have a lot of Mafia books and movies. I went through a stage in middle school where I was fascinated by it – specifically the Italian Mafia and the original 5 families, not so much the American Mob. Kind of weird, but true.

Favorite things to buy at the store would either be groceries or clothes. I love grocery shopping and look forward to it every week, especially when I can go somewhere new that I’ve never been before. And, try as I may, I have an addiction to shopping for clothes. As I’ve gotten a handle on my budget I buy far less than I used to, but it’s still one of my favorite things to do. I like to buy mostly cheap clothes and try to make them look chic with some of the more expensive items I own. It’s kind of like art :)

What is your dream job?

My dream job(s) would be: TV writer, food critic/writer or novelist. But something totally random that I’ve always wanted to do is find some sort of occupation that involved exploring old, abandoned buildings. I don’t know what I would do with it, make documentaries or write histories about the buildings maybe? No idea. I just love walking around empty abandoned buildings for some reason.

If you could travel anywhere in the world for free, where would you go?

Anywhere! But, more specifically: a trip all around Europe with no time limit, or an Australia/New Zealand trip. I hope to do both at some point in my life!

Streamlined

Good morning! I feel like I have so much to talk about today, I’m just bursting at the seams :)

So I’ll just start from the beginning. Last night. HIIT. Hell’s bells. Not. A. Joke.

I went to the gym right after posting and hopped on the treadmill to do Jessica’s Treadmill HIIT 1 workout. But because I am a weakling, I cut the actual HIIT part to only 10 minutes, for a total of a 30 minute workout.

It stilled kicked my butt though. I probably looked like a total goofball during the 9.0 mph segments because my short little legs were like a hamster on a wheel trying to keep up. I got alllll nice and schweaty though and I’m definitely going to be doing more HIIT workouts in the future.

Then I rushed home and got started on my streamlining process. I wanted to eliminate as many steps from my morning routine as possible so I could get out the door in enough time after this morning’s workout.

I layed out my workout clothes so I could put them on immmediately upon rising.

I got my coffee set up and ready to go so all I had to do was press brew.

I even got my smoothie ingredients together so all I had to do was add the banana and ice before blending.

My fridge is pretty bare huh? I didn’t really notice until I looked at that picture, haha. The stuff to the left of the blender was my lunch components for today. I also had my pantry items sitting out in a bag ready to go.

Other streamlining activities included picking out my outfit for work (absolutely critical, I do this every night or I’ll definitely be late) and making sure the apartment was clean so I wouldn’t try to pick stuff up in the morning. I’m anal about cleanliness so no matter how late I’m running I’ll always make the bed, wipe the counters, etc. even though it could totally wait until I get home in the evening.

I did all this while watching the latest episode of The Biggest Loser on DVR and baking up my easy dinner. I had half of a baked sweet potato with peanut butter.

And a sandwich made up of a Morningstar Chik’n patty (there’s that gaggy word again!), spinach and a laughing cow cheese wedge. Yum.

All together it was a great dinner! I know I’ve been slacking on actually cooking lately, but sometimes that just happens. No excuses.

As soon as TBL was over I went straight to bed. I was in my bed, lights off and eyes closed by 9:45. That’s pretty good for me! I think I probably fell asleep somewhere between 10:15 and 10:30, so not too bad. The 4:45 a.m. wakeup call was still a bit brutal though!

But it was nothing a cup of coffee couldn’t fix :) I changed, brewed my coffee, brushed my teeth and hit the road within 11 minutes.

As I said last night, I met up with Lisa from I’m an Okie to do a Body Pump class. It was the first time Lisa and I had met in person, and I was excited (and nervous) about it. Felt kind of like a blind date, haha.

She’s so sweet and wonderful in person and I’m so glad we are both Oklahoma food bloggers so we could meet! We actually went to the same college (Boomer!) at the same time and have a few mutual friends on Facebook, so it’s kind of funny that we’re just now meeting. Having so much in common made it feel like I’ve known her forever, and I am super pumped to have a workout buddy now :) Did I mention that she’s in amazing shape?

As for the Body Pump class, I really liked it! It went by pretty fast and other than the room being a little hot I can’t really complain. I probably made a fool of myself since I’m quite the weakling and kept trying to steal weights from the girl next to me, but I’m so so glad I went.

I definitely want to do morning workouts once or twice a week from now on so that I can have a some evenings off without having to rush around. I’m definitely looking forward to taking it easy tonight, that’s for sure.

I had to leave before the class was over to make sure I got to work on time, and my streamlining definitely helped me get around quickly today! I need to start doing those things all the time.

I managed to get to work with a few minutes to spare today, but not thanks to the traffic. I don’t know what the deal is lately. I’ve had this same commute for over a month now and have only experienced bad traffic once before this week.

However, every single day this week I’ve seen at least one bad wreck and have spent at least half the drive going under 20 mph. Every morning I’ve told myself that surely there won’t be another wreck and that I don’t need to leave earlier, but sure enough every day has been slow moving. It’s really pretty strange!

Now I’m just sitting here slowly sipping my Green Monster. I was starving during the class (going to eat something small beforehand next time), but now my appetite seems to have disappeared. I’m hoping I don’t crash later on from waking up so early. I feel a bit tired, but still energized from the workout.

Whew, are you tired of me yet? I think I am!

A Toast

I would like to raise my glass and toast to the end of the Monday workfest. CLINK! CHEERS! HURRAH!

I’m always glad when Mondays conclude, but today I am ecstatic. I was simply not on my A game today. I was tired, distracted, allergetic (now a word, thank you), and busy. All of those elements did make the day pass rather quickly though. I am just now starting to take on the responsibilities of my new position, so I had a lot of new information to process and the day just zipped by. Now if I just had that glass of champagne…

My lunch was interesting today. I had planned on having a boca burger on my German Dark Wheat bread, but the bocas were severly freezer burned. Instead I had a sandwich of two Laughing Cow cheese wedges and hot sauce.

Might seem strange, but it was quite tasty. I think it would be even more tasty with cream cheese. I also had a salad on the side to get some veggies up in thurr.

All in all it was a great lunch! Snacks were pretty minimal. I had some mini pretzels, compliments of Delta, that I’d forgotten I had.

And a lop-sided nasty-tasting apple that I only ate about 1/3 of.

Now I’m about to hit up some yoga. Normally I wouldn’t go because I know I have obligations during the next 2 or 3 classes, and I haven’t been in a few weeks. But I need a good stretch, and I need to remember that exercise isn’t all or nothing.

Oh, and before I go, I’ve been graciously given an award by two of my fave bloggistas – Taylor from the Joy of Food and Jolene from Everyday Foodie.

And now I shall tell you 7 Things You Don’t Know About Me:

1. My middle name is Sue, and so is my Mom’s.

2. I have a secret fantasy of marrying a man named Jude so I can play “Hey Jude” at our wedding (and pretty much everyday of my life) and sing it to my husband. I’m a HUGE Beatles lover.

3. My first kiss was in the 6th grade and the boy I was kissing leaned in so hard that he bloodied my upper lip.

4. I’m one of those people that gets a little blue around the holidays. Even though I try to fake it so I don’t bring anyone else down.

5. I have a tattoo on my hip that says “Que Sera, Sera” (what will be, will be). I may have mentioned that before, but I’m not sure.

6. I may be the most unathletic person on the planet.

7. I am a kind, loving and generous soul – but I get downright annoyed at significant others when they are sick. It takes all I have in me to be nice to them. I have no idea why. Big personality flaw.
