The Sweetest Pancakes

Thank you all for your warm responses to yesterday’s post. Those were just some things that were weighing on my mind. Life really is too short.

Life is way to short, for example, not to eat pancakes.

I love pancakes, but rarely make them. I think it’s because the batter gets everywhere, and I’m too much of a clean freak to enjoy that.

But sometimes you just have to throw caution to the wind and live a little.

I started by slicing up a banana.

While the pancakes were cooking up (I used Quaker’s oatmeal pancake mix, I ain’t no chef) I heated up some organic maple syrup.

 Once the cakes were all ready to go, I topped them with a dollop of Fage and apricot preserves and some caramelized bananas.

Ellie, this was a genius move. I couldn’t believe how sweet the bananas were just from browning them on the stove. Super yummy.

I will definitely be doing that more often!

The rest of the day yesterday was very laid back. I hung out by the pool for a bit, went to Body Pump, went to a party at my SIL’s and then came home to watch lots of Lost.

I thought the finale was kind of lame, but it seems that most of the die-hard fans really liked it. And since I’m not a die-hard fan I’ll just leave it at that.

At the party at my SIL’s I had some whole wheat pasta salad, brie-stuffed phylo bites and fruit pizza. No pictures.

Later on while I was watching Lost, I had a big bowl of blackberries. I bought them on sale over the weekend but I needed to eat them or freeze them.

Eat them it was!

I’m excited for the week ahead! I think good things are going to happen, don’t you? Gotta give it up to the power of positive thinking.
