My first co-op experience

I would like to make a public declaration this morning:

I think protein oats are the gaggiest food on the planet.

I’ve tried to like them, but they turn my stomach every time. Never again will I waste good oatmeal and good protein powder by combining them. Blech.

Because I didn’t eat my breakfast yesterday and had no food backups at work, I was positively hangry by the time lunch rolled around.

I learned from the ever brilliant Lisa that yesterday was National Egg Day, and never one to turn down a food holiday – I celebrated with an egg burrito.

I also satisfied a week-long craving of having a chocolate shake. A friend mentioned having one on Sunday, and I’ve been wanting one ever since.

I’m a firm believer that the only way to get rid of a craving is to satisfy it. I had a small shake and ate it with a spoon. No more craving!

Work kind of dragged by yesterday. I’ve been having a lovely bout of insomnia this week and I felt like I was going to pass out at my desk all day.

The only thing that got me through it was the anticipation of picking up my first ever co-op share after work!

I went with a lesser known co-op in Edmond (email me for more info, they don’t have a website) because they don’t have a membership fee. You just pay a flat rate each time you want to order a share, and everything is supposedly organic (although I’m not sure that’s true).

I was pretty impressed with the haul! My sister-in-law and I split the share because I didn’t think I’d be able to eat it all myself before stuff started going bad.

This is all the stuff we had to split in half. You’ve got carrots, green grapes, half a huge zucchini, cherries, and half a cantalope.

And beets! I’m in love with beets right now, but I’ve never cooked them myself. I’m more than a little scared of the mess, but excited to eat them.

I got to have all the broccoli because my SIL can’t have it. That’s a lot of broccoli. I have an idea for it though.

I also ordered a dozen farm fresh, organic eggs. I’m kind of scared of these too for some reason, but I’m sure they’ll be good.

There were also tomatoes and an avocado. As well as some strawberries and peaches, which I didn’t get a solo shot of and blueberries that I let my SIL have because I’m not a huge lover of blueberries. Oh, and a container of organic spring greens.

I have a lot of eatin’ to do!

After I put away my goodies, I realized that it had been 8 hours since I’d had my last meal. Yikes! Good thing my SIL had sent me home with some lentil curry to have for dinner.

The curry featured eggplant, zucchini and lentils and it was delicious. She told me to top it with feta, so I obliged.

For dessert I had my cantalope half filled with some strawberries.

Like summer in a bowl. I was in heaven.

I had planned on going to Body Pump last night as well, but it was cancelled. Honestly, that was kind of a blessing in disguise. My body was angry yesterday.

Sleep deprivation can really take a toll on a person very quickly. Also, my left foot has been hurting lately and I think I needed to take a day off of vigorous exercise. I did 40 minutes of random OnDemand workouts, but nothing too challenging.

I still didn’t sleep well last night, but I don’t feel as worn out today as I did yesterday so I think the break served me well. Hopefully this weekend I can catch up on some zzz’s.

One thing that makes me fairly certain that I wasn’t built for the 8 to 5 lifestyle is how poorly I sleep during the week.

I go to bed at 10 and don’t fall asleep until well after midnight. And when I do sleep it’s kind of that lucid sleep where I never actually feel like I’m asleep, if that makes any sense. So I wake up the next morning feeling like death.

During the weekends, when the pressure to conform to a certain sleep schedule is off, I sleep like a baby. It’s weird.

Just thought I’d share that because I know a lot of people deal with insomnia, and it sucks. I feel ya.

Oat Bran Primavera

Well, folks, it’s like they say – “The Lord giveth, and the Lord taketh away.”

I waited 2 weeks to share my Yellowstone news because I wasn’t sure if it was going to happen or not, and then the day I posted it, the plans fell through. Eh, c’est la vie. I guess it just wasn’t meant to be.

Yesterday was a pretty good Monday. I think my proactivity helped. Lunch was lentil soup with diced avocado, which I’ll be having again today so prepare to be bored tomorrow.

For lunch dessert I had some fresh strawberries. Nature’s candy.

I worked at the part-time job after I left the full-time job, so while there I munched on a mini clif bar.

Work was good, but kind of a boy’s club. I mostly just cleaned and played with my phone. Tonight we’re having a sports bra clinic for the ladies, so I’ll be in the majority once again ;)

I didn’t go to the gym last night. I’m cutting it dangerously close as far as meeting my 25 days goal, but I was too dang tired. I’ve also been nursing a mild migraine for the past two days and I just didn’t have the energy to workout through the pain.

Instead I had some Oat Bran Primavera.

This meal kind of just happened. I normally plan my dinners before I eat lunch, but today I was too busy and when I got home I just set into action before forming any idea of what I wanted.

It turned out great though. I stir-fried some yellow squash, broccolini and grape tomatoes in olive oil, salt, pepper and garlic. Then I added a splash of balsamic and let everything reduce.

While that was happening I cooked up some oatbran and added 2 tablespoons 2% shredded cheddar cheese and a light Laughing Cow cheese wedge and stirred until it was all melty and cheesy.

Then I combined the two.

And in case you’re wondering, yes I do fear that I’m going to turn into broccolini soon. I can’t stop eating it.

Much to my embarassment, I watched the premier of The Bachelorette last night. I have two things to say about it:

1. Can I have Phil?

2. The drama is getting way too redundant. I think I would be MORE interested if they’d cut all the staged controversy out for once.

Really, I just watch for the eye candy.

Wakeup Call Challenge Update: I keep forgetting to mention when I do my morning plyos. I also think I’ve somehow been removed from the email thread? Janetha?

Anyways, I haven’t been too consistent about doing them every morning but I’m currently at 115 minutes for the month.

Hey guys! Another gorgeous, windy, busy day here in Oklahoma. I’m pooped, so imma be quick with this one. Hit it.

There was also the usual Greek yog + pb situation. This is the situation that The Situation stole his name from. I’m sure of it.

After the FT job I hit up 105degrees for a high-dollar green monster, which they lovingly refer to as a Green Monkey.

Having this place so close to me could definitely do damage on my already injured bank account. But seriously, look at all these smoothie/juice options. Heavenly!

Remember when I went to 105degrees the first time? Yeah, this place is awesome. If you live in OKC, check it out! Or if you don’t live in OKC, but want to come here and visit me, then we can go check it out together. Sound like a plan? Yeah, I thought so.

Then I worked for two hours, which was fun! Love the PT job. How many times can I say that without it becoming obnoxious. It’s already obnoxious you say? Well, too bad.

After work concluded, I decided to enjoy an outdoor run of 5 miles.

And that concludes my day. Excuse me while I go starfish my bed.

Seeing Red

Oh, Murphy’s Law. It’s not often that I fall prey to you. But today is one of those days. I ask you to have mercy on me… there’s only so much a girl can take!

Yes, it’s been one of those mornings. I won’t go into the details. Let’s back up to last night, which was more pleasant.

It was another color-coded night. The theme? Red. My favorite color. (BOOMER!) Starting with a warm-up plate.

I love strawberries, but I think I was a bit over eager when I bought a huge carton of them at the grocery store this weekend. They’re about to go bad. For once in my life I have the problem of having too much food in the house. It feels very foreign.

So… I tried to knock out some of the groceries by cooking up a baked minestrone type dish. I went off a recipe out of Betty Crocker Vegetarian for a slow-cooker minestrone but varied it a lot.

I basically just combined one chopped onion, a cup of chopped green beans, a can of organic (no-salt added) diced tomatoes, a can of organic chickpeas, a can of organic tomato paste, 1/2 cup fresh chopped carrots, Italian seasoning and some parmesan cheese and baked it at 375 for about 30 minutes.

While it was baking, I made a sweet potato, egg and cottage cheese wrap.

I’ve missed having wraps in my life, and I’m loving these La Tortilla thin wraps.

When my minestrone was done I had a bowl, for quality control purposes of course.

Pretty good, but the recipe needs a little work. If you liked basil (which I don’t) I think it would really jazz up the flavor.

Oh, and about that run last night? Well, I semi-ran it. I mean I traversed the 6.5 miles, but it was windy as all get out and my knee is still hurting so I walked several times. Blah. I’m going to get a runner’s knee strap from work tonight I think.

I really need to find some new shoes, but I’ve been too busy to actually do it. Plus I think to get my discount I have to order them from the manufacturer, which will take awhile.

Anyways, today should be MUCH more relaxed at work than I have been of late, which is awesome. And tonight after work I’m going with B to see Alice in Wonderland, so I have something to look forward to! I’m determined to make this a great day.

Cloak of Positivity

Yay for Monday! My favorite day of the week!

(Did you believe that? I’m trying the whole fake it ’til you make it positivity thing, so let’s roll with it).

This week is full of possibilities. Lots of deadlines, lots of fun activities, lots of errands to finally check off the to-do list. Good times!

Yesterday was a good day, and it started with a good breakfast. I tried Oat Bran for the very first time!

I’ve always wanted to try oat bran, but I usually just end up buying oatmeal because it’s more familiar. I’m glad I bought this though, because oat bran is so much more voluminous than regular oats! I was impressed. I had it with some almond butter, sliced strawberries and a dollop of plain Oikos.

These bowls take awful pictures. They make everything look super red. I like red though, so it’s all good!

After eating that I had to finish up the laundry, wash my sheets and do a lot of work from home. Not the funnest part of the day, but it felt good to get it all done. I had to make the executive decision to post-pone my run until today. There just wasn’t enough time and I didn’t want to be stressed all day trying to rush though everything.

I’ll have to do the 6.5 miles after work tonight at the gym. Not ideal, but it will work.

Eventually I made lunch, which was Baked Risotto Primavera from this recipe. The only changes I made were using half veggie stock/half water to reduce sodium, and only using 1 cup of the Parmesan cheese. It turned out wonderfully!

This was a really good dish, I highly recommend the recipe. Pretty crap free too! I’m excited for the leftovers.

I really wanted something sweet afterwards, so I had a Dannon Honey Greek yogurt.

After I ate I got ready for my date. We went to the Oklahoma Thunder vs. Portland Trailblazers basketball game. (The Thunder lost by three… sad.) And after that had a quick dinner next door. It was really fun and much more relaxed than our other dates have been. I’m starting to think there may actually be something there…

I got home around 10 p.m., talked to my Mom for awhile, took a bath and hit they hay. I certainly have NOT had any trouble falling asleep lately. That is a huge perk of being so busy.

The morning has already been really productive, and I’m going to put on my cloak of positivity and kick butt this week!

My first overnighter

So I had a great post all typed out and pressed publish, only to have wordpress eat it. Bargh. I have to head out for a run, then bake some coffee cake, prep a casserole and a pitcher of green smoothies and get to bed in time to wake up at 5 a.m. tomorrow – so I’m going to have to make this snappy.

First off, thanks so much for your wonderful. thoughtful comments on my last post. They made me so happy! I was nervous to post that, but you guys really seemed to get where I was coming from. And I loved the discussion that went on.

Second off, I officially registered for the 8K on Saturday. I’m both nervous and excited. I’ll talk about my goals for the race tomorrow when I have a bit more time.

Let’s get to the food.

My first overnight oats experience. This was 1/2 cup of old fashioned oats, 1/2 cup plain Greek yogurt, and 1/2 cup organic skim milk. I dressed it up with a sliced banana, two huge sliced strawberries and some mighty maple peanut butter (added post photo).

I liked it, but I should have used vanilla almond or soy milk to add some sweetness. This was very filling! I had to talk myself into eating a snack later on, but I knew I needed one to make sure I wasn’t hungry during my run today.

On the way home from work I drank my vitamin instead of having it in pill form (as I’ve been doing almost every day as part of Project Glow).

Also on my way home I spotted this.

I don’t get it. I really don’t.

Early to bed, early to rise

Good evening! It’s 6 p.m. and I’m already starting to get ready for bed. I have a very early wake up call in the morning, and I am not a morning person. So I’m hoping to fall asleep at a freakishly early hour to alleviate the pain a bit.

Today was a good Friday, indeed. It started off with a bagel, and any morning that starts with a bagel makes me happy.

I went with an apple cinnamon bagel in place of my usual asiago cheese version, because the only cream cheese options were of the sweet variety.

One side has strawberry cream cheese and the other has some kind of walnut cream cheese, I forgot the exact name of it. It’s from Panera so I bet someone out there knows what it is. I just went with a light schmear of each variety, since this was a pretty dense breakfast.

After breakfast I proceeded to freeze my hiney off in my office. It was only 54 degrees out today! That’s the coldest it’s been all year, and far colder than the average temps in Oklahoma at this time. I think I might have to get a space heater!

Good thing I packed a warm, comforting (if not boring) lunch.

I had the last (smallish) serving of tortilla soup with a wedge of Garlic and Herb Laughing Cow melted in. The chunks of LC were so good! I think this was my favorite bowl yet, and now I’m kind of sad it’s gone.

Another good thing about this spicy soup is that it makes me CHUG my water, which is hard to do when I’m freezing. This cup was full when I started eating.

I completely spaced today and packed a Green Monster and soup, both intended for lunch. Not really sure how that happened, but I drank the monster a few hours after my lunch. It worked out well because there really wan’t much of the soup left and it probably wouldn’t have held me over.

It was the president of my company’s birthday today (I work in a very small office so he’s actually my main supervisor) so we of course had cake today. I was pleased to discover that it was angel food cake with strawberries. I sneaked a peek at the package the cake came in and it was relatively low-cal so I had a small piece. I was planning to opt out, but how can I turn down a “sensible” dessert on the President’s birthday ;) It was quite tasty, btw.

I also had a banana shortly before leaving the office.

After work I went to the gym for my last workout of the week. I’m glad I was able to get workouts in every day since I’m going to be gone for 3 days and not working out.

Now I’m home, about to eat the last of the casserole (ugh, I’m glad it’s gone I am pretty much over it by now) and get ready for bed. Let’s hope Mr. Sandman visits me nice and early tonight!
